Did you know that the shape of a fat molecule can make it solid like butter or liquid like olive oil? 🧈🥑 It’s all about its chemical structure.

BUTTER 🧈 ➡️ A saturated fatty acid that has all its carbon bonds filled with hydrogen, making the molecule straight and stable. This is why saturated fats stack well, staying solid at room temperature—like butter!

OLIVE OIL ➡️ An unsaturated fat, is different. When hydrogen is missing, the molecule bends. These bends, or kinks, make them more fluid, like olive oil.

⚠️ Most FACTORY OILS are loaded with multiple unsaturated bonds, creating highly unstable fats. We’ll dive more into these industrial oils in our next video, but in short, these kinks make them react easily and become harmful.

🧪Organic chemistry, which is the study of life-based molecules, tells us that carbon, hydrogen, and oxygen are essential for life.

⚛️ Fat molecules, or fatty acids, are actually quite simple: they’re chains of carbon atoms bonded to hydrogen, with a special carboxyl group on one end, which makes them an acid.

So, when you hear 'fatty acid,' just think of it as a stable, carbon-based chain that’s mostly hydrogen.

Pumpkin Energy Bites

Ingredients:

👉 1 cup pumpkin puree
👉 2 cups dry, uncooked oat flakes
👉 2 tbsp pure maple syrup
👉 1/4 cup ground flax seeds

👉 1/2 cup chocolate chips
👉 1/3 cup cacao (optional)
👉 Instructions:

One of the most common questions I get from clients is 👉“What should I eat?”

Honestly, there’s no one-size-fits-all answer!

I’ve worked with hundreds of clients, and I’ve never created the same protocol twice.

Why?

Because every person’s microbiome and nutritional needs are completely unique. 🌿

For some people with autoimmune conditions, certain plants need to be removed. For others, cutting out specific animal proteins or fats has been the key to better health. But the universal foundation that benefits everyone, regardless of symptoms? Removing processed grains, sugars, and limiting alcohol. 🚫🍞🍬🍷

Yes, you might see conflicting advice all over social media, but here’s the truth 👉there isn’t a nutritionist, dietitian, naturopath, or doctor out there who wouldn’t agree that cutting down on processed foods is essential for your well-being. 💯

For many people, though, that’s just the beginning. Depending on your symptoms, more personalized tweaks might be needed. The good news? After an elimination diet, most of my clients can reintroduce and enjoy a wide range of whole, nutritious foods. 🌱✨

Did you know that whole foods found in nature, including meat, have powerful healing properties? Take properly raised pork, for example—it’s not only delicious but also packed with nutrients that support heart health. 🥩✨

Unlike beef, it is not a good source of vitamin A, but does contain useful amounts of B vitamins and minerals. Pork is higher in monounsaturated fats than saturated fat (although there is no need to worry about saturated fat in the context of a healthy diet! - refer to my previous post)

Pork Macronutrients (Per 100 grams)
🌱 Total Fat 10 g
🌱 Monounsaturated Fat 4.22 g
🌱 Saturated Fat 3.34 g
🌱 Protein 29 grams
🌱 Carbohydrates 0 g

🍽️Pork Chop with Pineapple & Roasted Sweet Potato (Serves 4)

✨Ingredients

👉🏼 4 bone-in or boneless pork chops
👉🏼 4 sweet potatoes, washed and cubed
👉🏼 2 cups pineapple, chopped
👉🏼 1 tbsp onion powder
👉🏼 2 tbsp paprika
👉🏼 2 tbsp organic tamari soy sauce or coconut aminos
👉🏼 2 tbsp honey
👉🏼 2 garlic cloves, minced
👉🏼 2-3 tbsp rendered bacon fat, lard, butter, or tallow
👉🏼 2 tbsp parsley, minced
👉🏼 Salt and pepper to taste

✨Directions

1️⃣ Heat oven to 400 degrees Celsius
2️⃣ Seasoned sweet potato with salt, pepper, and paprika. Roast in oven for about 30 minutes.
3️⃣ Season pork chops on both sides with salt, pepper, and onion powder
4️⃣ Sautee cooking fat, then sear pork chops on one side for 4-5 minutes over medium heat, until golden brown.
5️⃣ While the pork chops are cooking, add the pineapple, soy sauce, honey, and garlic to a bowl and mix.
6️⃣ Flip the chops over then add the pineapple sauce on top. Continue cooking pork chops for another 5-6 minutes.
7️⃣ Serve with a side of roasted sweet potato and garnish your final dish with minced parsley

Should you worry about saturated fat? 🤔

Whether you’re vegan, omnivore, or carnivore, THIS applies to you! For years, we’ve been told that saturated fat causes heart disease, but recent studies show a different side to the story!

Thanks to experts like Dr. Bret Scher, we know that not all saturated fats are created equal. Saturated fat from processed foods like pizza and cookies isn’t the same as the kind found in whole foods like coconut or red meat 🥥🥩.

When saturated fat is part of a whole foods diet (think: red meat with green beans, avocado, or brussels sprouts), it’s far less likely to contribute to heart disease.

In fact, many low-carb and ketogenic diets that include healthy animal fats show improved heart health without limiting saturated fats. 🥑

The takeaway? With conflicting studies, sometimes we have to make our own decisions. For me, eating whole, unprocessed foods with saturated fat isn’t something I stress about!

The Regeneration Reset retreat hosted by The Hightail Ranch was filled with eye-opening activities—up-close bison tours, delicious farm-to-table meals, and even hands-on workshops (hello, homemade tallow moisturizer!). We had the pleasure of hearing from Registered Dietician Diana Rogers (@sustainabledish), who shared invaluable insights on the power of animal protein and the importance of sustainability. 🦬🌱
