Heat large frying pan over medium heat and add 1 tbsp. of extra virgin olive oil
Add to pan ground chicken, onion, garlic, zucchini, yellow pepper, tomatoes, and spices and cook for 12 minutes, or until cooked through
While the chicken is cooking, in a separate pan, heat skillet to medium heat, add remaining olive oil and cauliflower rice and cook for 10 minutes
Divide the cauliflower rice into bowels and top with chicken and veg, sliced avocado and garnish with parsley
