Pan-Fried Chicken, Veggies & Cauliflower Rice with Avocado

Ingredients
  

  • 2 tbsp Extra Virgin Olive Oil
  • 8 oz Ground Chicken
  • ½ Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Zucchini, diced
  • 1 Orange Bell Pepper, diced or any colour
  • ½ tsp Paprika
  • ½ tsp Cumin
  • Sea salt + Pepper, or to taste
  • 1 can Canned Diced Tomatoes
  • 2 cups Cauliflower Rice
  • 1 Avocado, sliced
  • ½ cup Parsley, chopped roughly

Instructions
 

  • Heat large frying pan over medium heat and add 1 tbsp. of extra virgin olive oil
  • Add to pan ground chicken, onion, garlic, zucchini, yellow pepper, tomatoes, and spices and cook for 12 minutes, or until cooked through
  • While the chicken is cooking, in a separate pan, heat skillet to medium heat, add remaining olive oil and cauliflower rice and cook for 10 minutes
  • Divide the cauliflower rice into bowels and top with chicken and veg, sliced avocado and garnish with parsley
  • Serve & Enjoy!
